Quick Tamale Pie

1 15 oz can of chili with beans

1 16 oz can corn

1 cup grated cheese

1-2 cups corn chips (Fritos)

Mix all ingredients in casserole dish. Bake at 350 for 30 minutes or Microwave 5 minutes. Top with sour cream if desired.




Chicken Cordon Bleu Casserole

2 breasts

4 slices ham

2-3 cheese-provolone

1 egg

Cut up and mix together in bowl. Spray a 9×13 pan, sprinkle plan bread crumbs along bottom of pan. Pour chicken mixture into pan, top with parmesan flavored shake & bake.


1 can of cream cheese soup

1 cup sour cream

Mix and heat. Serve over top.




Easy Chicken and Rice or Pork Chops and Rice:

1 cup uncooked rice

1 pkg onion soup mix

1 can cram of chicken soup

2 cups water

Chicken or pork chops

Grease bottom of 9×13 pan. Pour in rice. Mix soup mix, soup and water. Pour ½ of it over the rice. Put meat on top of rice, pour remaining soup mixture on top of meat. Cover with foil and bake 30 minutes at 425.  Take off foil and bake for 30 more minutes. If using pork chops, serve with applesauce.




Easy Chicken Pot Pie:

1 cup cooked cut up chicken

2 cups frozen mixed vegetables ( or 2 cans vegetables, drained)

1 can condensed cream of chicken soup

1 cup Bisquick (or Jiffy) baking mix

½ cup milk

1 egg

Mix the baking mix, milk and egg and set aside.  In greased casserole dish, mix the chicken, vegetables and soup.  Pour the baking mix over the top. Bake for 30 minutes at 400.  Variation:  Can top with canned biscuit dough instead.




Chicken and Broccoli Casserole:

2 cups diced cooked chicken ( or turkey)

1 bunch broccoli chopped ( or 1 lb bag, frozen), cooked

1 – 2 cups grated cheese

2 cups cooked rice

1 can cream of chicken soup

1 tsp dried onion

2 Tablespoons mayonnaise

1 tsp lemon juice

½ cup milk

Crushed crackers or chips

Grease bottom and sides of  9x 13 pan. Put rice in bottom of pan. Add cooked broccoli, cheese and chicken. Top with mixture of soup, onion, mayonnaise, lemon juice and milk.  Top with crushed crackers or chips.  Bake at 350 for 30 min.





Casserole (from Karen Peterson):

Put the following in a large casserole dish with a lid.

1 layer sliced potatoes

1 layer sliced or baby carrots

1 lb ground beef (cooked)

1 layer sliced onion.

A handful of uncooked white rice

1 layer sliced potatoes

Mix one can of tomato soup and one can of water, pour over top.  Add a bit of salt and pepper with the potato and meat layers. Cover and bake at 300 degrees for 2 to 3 hours.





Green Bean Casserole:

2 cans green beans

2 cans chicken soup

1 cup parmesan cheese

Spread beans and soup in layers in a casserole dish. Sprinkle cheese on top and bake until bubbly.





Taco Casserole (6 servings):

1 1/2 lbs lean ground beef or turkey

1 pkg McCormick Taco Seasoning Mix

2 cans (8 oz each) or 1 can (15 oz) tomato sauce

1 can (16 oz) pinto beans, drained and rinsed (optional)

1 can (11 oz) whole kernel corn or Mexican-style corn, drained

1 cup shredded cheddar cheese

1 cup broken tortilla chips

Brown beef in large skillet on medium-high heat. Drain fat. Stir in seasoning mix, tomato sauce, beans and corn. Bring to boil. Reduce heat and simmer 5 minutes, stirring occasionally. Spoon into 2-quart baking dish. Top with cheese and tortilla chips. Bake in preheated 400* oven 5-10 minutes or until cheese is melted. Garnish with sour cream and sliced green onions, and serve with shredded lettuce and chopped tomatoes, if desired.
